The 2012 Iowa Celiac Conference is pleased to introduce the following speakers:


Jules Sheppard; Jules Gluten Free Flour (Sponsored by Hy-Vee)
Jules Shepard will update us on the efforts of 1in133.org, a group she helped co-found, to help keep the pressure on the FDA to pass more comprehensive food labeling guidelines relating to gluten-free.  Jules, founder of Jules Gluten Free, will also share entertaining behind-the-scenes stories and photos of her and her team building the world’s tallest gluten-free cake (over 11 feet tall!) as part of the event in 2011 that re-focused the gluten-free community, and, more importantly, the FDA, to re-visit proposed gluten free food labeling guidelines.  Jules will also be doing a live cooking demonstration in the afternoon.  Always entertaining, always passionate, Jules is a don’t-miss addition to our conference.

Dr. Thomas D. Johnson, Director of Endoscopy, McFarland Clinic and Chief of Staff elect, Mary Greeley Medical Center, Ames, Ia.  Dr. Johnson’ practice focuses on general gastroenterology, and diagnostic/therapeutic endoscopy.  His talk is titled “The Incognito Nature of Celiac Disease and the Gluten Free Diet”.

Judy Trumpy, RD, LD; “What’s on Your Gluten-Free Plate” is a celiac’s challenge and opportunity to utilize the USDA’s dietary guidelines.

James P. Eckman, Th.M., Ph.D.; President and Professor in Ethics, Theology and History at Grace University in Omaha, NE.  He has conducted marriage seminars, family life conferences, and retreats throughout the Unites States, Germany, Switzerland and Ecuador.  He will be speaking on how Celiac Disease not only has personal effects, but affects the whole family and all aspects of your life.

Dr. Jennifer Hill, NP-C, DNP; Blank Pediatric Gastroenterology Clinic, Des Moines, IA.  Dr. Hill has established and is the Director of THE FIT KIDS CLINIC and a Professor at Graceland University.  She travels around the United States giving seminars on child and adult Gastrointestinal Disease, including in-depth information on Celiac Disease.  She provides extensive education to students, patients, families, schools, and other healthcare providers about Celiac Disease.
